Healthy nutrition in Czech primary school science textbooks – conceptual analysis

Abstract:

Tato práce si klade za cíl provést pojmovou analýzu učebnic přírodovědy z hlediska současně aktuální tematiky zdravé výživy. Všechny zkoumané učebnice mají schvalovací doložku MŠMT pro rok 2008/2009. K dosažení cíle byla zvolena metoda frekvenční pojmové analýzy. Výzkum se odehrával ve dvou fázích. V první fázi byla provedena analýza kurikulárního dokumentu RVP ZV. Druhá fáze byla tvořena sedmi částmi: 1) opatřit učebnice přírodovědy s doložkou MŠMT, 2) provést obsahovou analýzu učiva zdravé výživy v učebnicích, 3) vytvořit kategorizaci pojmů zdravé výživy, 4) zpracovat frekvenční pojmovou analýzu zdravé výživy, 5) statisticky srovnat pojmovou skladbu, 6) vyhodnotit nejčastěji používané pojmy týkající se zdravé výživy, 7) srovnat jednotlivá nakladatelství. Výsledky ukázaly, že v RVP ZV je obsaženo v dostatečné míře učivo týkající se zdravé výživy. Frekvenční pojmová analýza zkoumaných učebnic přírodovědy ukázala, že se jednotlivé učebnice liší v kvantitě zkoumaných a hledaných pojmů. Celkem bylo nalezeno 137 různých pojmů, se kterými autoři pracují ve všech osmnácti zkoumaných učebnicích z šesti nakladatelství. Na nakladatelství je průměrný počet 46 pojmů. Všechny nalezené pojmy zdravé výživy byly rozřazeny do čtyř kategorií (denní režim, pitný režim, pohybový režim, zdravá strava) dle RVP ZV. Z výsledků vyplynulo, že nejpočetněji je ve všech učebnicích zastoupena kategorie zdravé stravy, s naprostou převahou nad kategoriemi ostatními.

Abstract:

The objective of this thesis is a conceptual analysis of natural studies text books from the current topic of healthy diet point of view. All the textbooks analysed have an approbative clause of the Ministry of Education, Youth and Sports for the school year of 2008/2009. For achievement of this objective we chose a method of frequency conceptual analysis. The research was performed in two phases. During the first phase, the curricular document the Frame Educational Program for Elementary Education was analysed. The second phase constituted of seven parts: 1) to get natural studies textbooks with an approbative clause of the Ministry of Education, Youth and Sports, 2) to perform a content analysis of the healthy diet curriculum in the relevant textbooks 3) to create a categorisation of concepts of healthy diet, 4) to elaborate frequency conceptual analysis of healthy diet, 5) to compare the conceptual composition in terms of statistics, 6) to evaluate the most frequently used concepts concerning healthy diet, 7) to compare individual publishers. The results showed that, in sufficient extent, the Frame Educational Program for Elementary Education includes curriculum concerning healthy diet. The frequency conceptual analysis of the textbooks showed that the individual textbooks differ in terms of quantity of the analysed and searched-for concepts. In total, we found 137 various concepts, which are used by the authors of all the eighteen analysed textbooks from six publishing houses. On average, there are 46 concepts per a publishing house. All concepts of healthy diet found were divided into four categories (daily regime, drinking regime, movement regime, healthy diet), according to Frame Educational Program for Elementary Education. The results imply that the most frequent category in the text book is that of healthy diet, with absolute superiority over the remaining categories.
