Terpenic compounds in wines of Muscat grape varieties

Abstract:

Tato práce se zabývá studiem obsahu volných a vázaných terpenických látek ve vínech muškátových odrůd původem z České republiky. Aroma vína je jeden z významných ukazatelů pro posouzení kvality vína. Terpeny obsažené ve vínech muškátových odrůd pozitivně přispívají k aroma vína. Do studie byla zahrnuta vína odrůd ‘Muškát moravský‘, ‘Muškát žlutý‘, ‘Muškát Ottonel‘, ‘Irsai Oliver‘, ‘Lena‘, ‘Agni‘, ‘Mery‘ a nově vyšlechtěná odrůda ‘Muskana‘. Pomocí plynové chromatografie s hmotnostní detekcí (GC-MS) byl ve vínech sledován profil pěti monoterpenů. Byla stanovena koncentrace linaloolu, hotrienolu, α-terpineolu, nerolu a geraniolu. Pro hodnocení struktury vín a aromatického profilu vín byla použita senzorická analýza. Obsah glykosidicky vázaných terpenů převýšil obsah volných forem terpenů. Hotrienol byl z vázaných terpenů v největším množství. Nejvyšší množství volného terpenu bylo zjištěno u linaloolu. Vína odrůdy ‘Muškát moravský‘ se vyznačují velmi vysokým obsahem terpenů. Vysoké koncentrace monoterpenů byly zjištěny také u vín ‘Irsai Oliver‘ a ‘Lena‘. Nově vyšlechtěná odrůda ‘Muskana‘ vykazovala také vysoké koncentrace terpenických látek a lze ji řadit k odrůdám muškátového typu.

Abstract:

This work deal with the study of the content of free and bound terpenic substances in wines of Muscat varieties originating from the Czech Republic. Wine aroma is one of the important indicators for the assessment of wine quality. Terpenes contained in wines of Muscat varieties contribute positively to the aroma of wine. The wines of the varieties 'Moravian Muscat ', 'Muscat Yellow', 'Muscat Ottonel', 'Irsai Oliver', 'Lena', 'Agni', 'Mery' and the newly bred variety 'Muskana' were included in the study. The profile of five monoterpenes in the wines was monitored by gas chromatography-mass spectrometry (GC-MS). The concentrations of linalool, hotrienol, α-terpineol, nerol and geraniol were determined. Sensory analysis was used to evaluate the structure of the wines and the aromatic profile of the wines. The content of glycosidically bound terpenes exceeded that of free forms of terpenes. Hotrienol was the most abundant of the bound terpenes. The highest amount of free terpene was found for linalool. Wines of the variety 'Moravian Muscat' are characterised by a very high terpene content. High concentrations of monoterpenes were also found in the wines‘ Irsai Oliver‘ and ‘Lena‘. The newly bred variety ‘Muskana‘ also showed high concentrations of terpenes and can be classified as a Muscat-type variety.
