Tato bakalářská práce shrnuje poznatky o heterocyklických aminech, látkách s mutagenním a karcinogenním potenciálem, vznikajících při tepelném opracování potravin. This bachelor thesis summarizes knowledge of the heterocyclic amines, substances with mutagenic and carcinogenic potential, resulting from thermal processing of foods. First, attention is paid to the influence of diet on tumor formation, the work focuses on the history of studies of heterocyclic amines, describes their characteristics, formation, occurence, effect on the mammalion organism and provides …more
